You will have access to sustainable dishes or compostable or recyclable containers. They sort compostable and recyclable matter in the kitchen and on clearing of tables, they use water in pitchers rather than bottled water. Much of the food is served bulk rather than in individual portions. The menu uses many local products and the food surplus is offered to local community organisations.
