The kitchen is directed by Chef Jean-Sébastien Giguère and presents a seasonal menu in the colors of local products. At the heart of its kitchen, a table is specially set up to allow guests to soak up emotions, this is the Chef’s Table which offers a unique six-course tasting menu. We have developed several projects to promote our gourmet vision, including a rooftop garden, a bee hive to cook with products made here.
In the dining room, the passion for wine is felt. Our team is made up of Catering Director Chantal Plourde and head sommelier Jean-Simon Rioux-Ranger as well as several accredited sommeliers who are on hand to take guests on a journey through one of the most beautiful wine cellars in the world. Following several years of work and distinction, Le bistro Gourmand- le Coureur des Bois was awarded in 2018 and 2019 and 2020 the prestigious title of the Grand Award presented by the Wine Spectator. Joining the elite, the restaurant now ranks among the world’s top 100 wine program leaders. The collection covers 18,000 bottles with 4,800 references listed. Two sensory analysis rooms open their doors to you. Businesses and individuals can take advantage of culinary and sommelier workshops.
The hotel has acquired a sugar shack located 15 minutes away in the town of Saint-Marc-sur-le-Richelieu: La Cabane du Coureur-Cabane Gourmande. A menu under the theme of the gourmet harvest will be offered to you this fall, featuring the abundance of our vegetables and apples. This concept is directly linked to our gourmet shift. We own a chicken coop and grow various varieties of mushrooms that are found on your plate. This year, the Cabane du Coureur was awarded the title Award of Excellence awarded by the Wine Spectator for its wine list.
